2 lb ground turkey
1/4 cup minced white onion
1/4 cup grated parmesan
1/4 cup grated bread crumbs
1 egg
1 tsp salt
1 tsp pepper
Olive Oil
1 cup grated bread crumbs in a seperate bowl
4 cups Chicken broth
Combine turkey, onions, parm, bread crumbs, egg, salt and pepper. Roll into 1/2" balls, then roll balls in the bread crumbs that you set aside. Heat olive oil in a shallow pan over medium heat, saute meatballs for approx 10 minutes - be sure to roll them so they brown evenly. Add chicken to pan, reduce heat and cover for approx 10 minutes. The meatballs will absorb the chicken broth, keeping them moist.
